1
On Friday we hosted a Mexican Night at our church.
-
2
It was lots of fun.
-
3
I was very nervous because we tried out a new menu and I wasnt sure how it would go.
-
4
Thankfully everyone was happy and looked liked they were enjoying the food.
-
5
The food was largely done by two talented ladies with very efficient kitchen skills.
-
6
We had pulled pork tacos (can anyone say yum in Spanish?
-
7
), nachos, 4 Mexican salads, sundaes...
-
8
I better stop I am getting hungry again!
-
9
It was awesome.
-
10
I made my guacamole.
-
11
I always tell my kids the secret ingredient to any recipe is you.
-
12
(Borrowed from Kung Fu Panda I have two boys and thats all I am going to say!)
-
13
Well sometimes the secret ingredient comes in a little glass container called a salsa jar.
-
14
Read on and enjoy!
-
15
Combine all the ingredients in your blender or food processor and blend to ensure smoothness.
-
16
Make sure the garlic is mixed in properly.
-
17
Add salt to taste.
-
18
Cover (make sure to press the plastic wrap directly on the guacamole) with a plastic wrap to prevent discolouring.
-
19
Apparently you can add to the seeds of the avocado to ensure the guacamole stays green.
-
20
From my kitchen to your table!

How to dice an avocado:
-
22
Cut the avocado in half.
-
23
Smack the blade of the knife into the seed so it pierces it.
-
24
Twist the seed and it should come out clean.
-
25
Try not to squeeze the avocado too much while you are doing this.
-
26
Score the flesh with horizontal and vertical cuts with a knife.
-
27
Scoop out the flesh with a spoon pressing against the skin.
