Combine the yeast, sugar and salt in a large bowl; mix well. Add 1 1/2 cups lukewarm water; let stand for 10 mins until the mixture is frothy and bubbling.

Place flour in a large bowl and make a well in the center. Add the yeast liquid, a quarter at a time, mixing with your fingers until the mixture is sticky and clumps together.

Transfer to a lightly floured surface and knead the dough with your hands for 5-8 mins or until the dough is smooth and pliable (you may need to add a little extra flour or water).

Place the dough in a clean, lightly oiled bowl. Cover with a damp tea towel; let stand in a warm place for 1 hour or until doubled in size.

Remove the tea towel and punch the dough a few times to release the air. Cover with tea towel; let stand in a warm place for 30 mins.

Preheat the oven to 375u00b0F. Divide the dough in half. Roll or shape each piece into a rough rectangle or oblong. Place on 2 parchment paper-lined baking pans.

Let stand for 5 mins. Make gentle indentations across the top with your fingertips.

Combine the oil, garlic and herbs and spoon over the dough, letting some settle into the indentations. Sprinkle with the Parmesan cheese.

Bake for 20-25 mins or until golden and puffed. Serve warm in slices.
