Deseed and sliced the bell peppers and cut the onion into wedges.

Put the vegetable to a mixing bowl an add 2 or 3 tablespoons of oil.

Seasoned with a 1/2 teaspoon seasoned salt and 1/2 teaspoon black pepper.

Then mix well.

Place the vegetables on 2 large heavy duty sheets of aluminum foil.

Fold the first piece of aluminum foil up and seal tight.

Repeat with the second sheet of tin foil.

Set up your grill with a 3 Zone Fire.

Add a double thick layer of hot charcoal on the back 3rd of the grill.

Add a single layer of hot charcoal in the middle 3rd the grill.

Leaving the 1/3rd in front of you empty and heat free.

Add the bratwurst and seasonings to the aluminum pan then add the beer.

Place the pan of bratwurst on the back of the grill directly over the fire.

When the pan come to a full boil move to the front of the grill.

And place to the vegetable pack directly over the fire in the back.

Cook about 10 minutes flip and cook for an additional 10 minutes.

Remove the vegetables from the fire and place it in a warm oven until game time.

Allow the brats to stew for at least another 40 minutes (you can go longer if you have the time).

Flip brats occasionally and add a little water as needed.

When you're ready to smoke the brats removed from the pan and place on the cool side of the grill.

then add a handful of 2 of wet hickory wood chips.

Transfer the beer bath to a crock pot or slow cooker and set on low.

Close the top vent and smoke for 15 to 20 minutes (you can smoke for hours if you have the time).

When you finish smoking the brats remove from the grill and put in a crockpot till your ready to serve.

Drain the juice for the peppers and onions and place in a serving bowl.

Set up a buffet style with a good variety of mustards.
