Ingredients: 1 tablespoon orange juice; 2 tablespoons brown sugar, DIVIDED; 1 teaspoon brown sugar, DIVIDED; 2 ½ teaspoons cinnamon, DIVIDED; 2 granny smith apples, peeled and diced; 3 tablespoons quick-cooking oats; 2 teaspoons quick-cooking oats; 3 tablespoons flour; ¼ cup walnuts, chopped; 1 teaspoon flax seed; ⅛ teaspoon nutmeg (optional); 8 teaspoons butter, refrigerator cold but GRATED; ⅓ cup plain yogurt; 2 tablespoons pure maple syrup

3 tablespoons flour
¼ cup walnuts, chopped
1 teaspoon flax seed
⅛ teaspoon nutmeg (optional)
8 teaspoons butter, refrigerator cold but GRATED
⅓ cup plain yogurt
2 tablespoons pure maple syrup

Preheat oven to 375 degrees.

In cup, stir in orange juice, 1 teaspoon of the brown sugar, and 1/2 teaspoon of cinnamon with apple.

Put apples into medium bowl, dump above mixture in, and mix.

Into medium bowl mix together remaining brown sugar (1 tablespoon plus 2 teaspoons), remaining cinnamon (2 teaspoons), quick cooking oats, flour, walnuts, flax seeds, nutmeg (if you like it), and the grated butter.

Cut two foil pieces into 12 inch squares.

Divide the apple mixture between the two.

Divide and sprinkle the oatmeal mixture onto the apple.

Seal foil.

Bake sealed for 14 minutes, and UNSEALED for 10 minutes.

Mix together yogurt and maple syrup and use as a topping, if you want.
