CRISPY FRIED SHALLOT

with oil slowly saute shallot till lightly brown but not burn stiring continuously and remove once half of the shallot start to brown and drain immediately

FRIED VERMICELLI

with oil saute garlic till fragrant then add vermicelli and mix wellthen add only 2 tbsp of light soy sauce first

add beansprouts and mix well then add another 1 tbsp of light soy sauce

break 3 eggs first onto fried vermicelli and let eggs set then fold over and let eggs set again

add balance 1 tbsp of light soy sauce and seasoning with dried cranberry and mix well and once vermicelli slightly crispy off heat and serve
