Fried Cucumber Rings

   Peel, slice lengthwise and scoop out pulp.

   Cut into 2 1/2 x 1/2-inch strips.

   Combine milk and egg, mix well.

   Set aside. Combine biscuit mix, bread crumbs and salt.

   Dip cucumber in milk mixture then bread crumb mixture.

   Fry in hot oil until golden brown.

   Drain on paper towels.
