Preheat oven to 350 F.

In a medium-sized bowl mix the flour, margarine, sugar and coconut (if using). Press into a 13x18x1 pan and bake at 350 F for 15 minutes. Remove pan from oven, set on a rack and allow the crust to cool.

In a large saucepan over medium heat, combine sugar, cornstarch and Jello. Add water, stir and bring to a boil. Remove from heat and cool until the mixture is beginning to set.

Meanwhile, prepare peaches as specified above, put them in a bowl and stir in the Fruit Fresh. Add peaches into the Jello mixture and pour onto the cooled crust. Use an offset spatula to smooth the top. Refrigerate for at least 3 hours.

Put the cream into a large bowl. Whip until soft peaks form, then whip in the icing sugar and vanilla. Spread on top of the dessert. Cut into 24 squares to serve.
