Fresh Fig And Halloumi Salad

   You will find halloumi in Montreal in Trip de Bouffe, in PA stores, or in Arab grocery stores. This cheese has a semi-soft texture and is a mixture of goat and sheep milk. Used ideally for cooking, it may be grilled in olive oil or fried without melting. It is used in salads and for kebabs.

   Halloumi cheese is salty, so soak in water for an hour to make it sweat a little.

   Then place the argula leaves, cherry tomatoes, sliced radishes, and figs in a bowl. Cut the halloumi in slices and fry in a grill pan for a few minutes. Garnish salad with fried cheese.
