In a large bowl mix the water, 2 cups flour, sugar and salt for a couple of minutes.

Beat for two minutes.

By hand, stir in enough flour to make a stiff dough.

Knead on a floured surface until smooth and elastic.

Punch down the dough - divide it into two.
