Ingredients: 1 (5 lb.) head cabbage; 1 Tbsp. kosher salt; 1 green pepper; 1 large carrot, chopped fine; 1 small onion, chopped fine; 1 rib celery, chopped fine; 2 c. sugar; 1 c. cider vinegar; 1 tsp. celery seed; 1 Tbsp. mustard seed; 1/4 tsp. turmeric for color (if desired)

Servings: persons

1 (5 lb.) head cabbage
1 Tbsp. kosher salt
1 green pepper
1 large carrot, chopped fine
1 small onion, chopped fine
1 rib celery, chopped fine
2 c. sugar
1 c. cider vinegar
1 tsp. celery seed
1 Tbsp. mustard seed
1/4 tsp. turmeric for color (if desired)

Shred cabbage fine.

Add salt and mix in large bowl.

Set aside for 1 hour.

While waiting, prepare remaining vegetables. Make a syrup of sugar, vinegar, celery seed and mustard seed and boil for 1 minute until sugar is dissolved and cool to lukewarm. Drain cabbage and squeeze to remove water.

Pour syrup over all vegetables and mix thoroughly.

Pack in desired containers.
