Preheat oven to 180u00b0C. Draw 3 circles, 8cm in diameter, on a piece of baking paper, turn over and place on a baking tray.

Cut out 12 pieces of paper (8cm x 1cm) and write out your fortunes!

Whisk egg whites, extracts and oil together until foamy, but not stiff. Combine flours, salt,Natvia and water in a small bowl, then add to egg whites to form a smooth batter. Spread teaspoons of batter evenly around marked circles on your tray and bake for 5-8 minutes or until browning around the edges.

Remove tray from oven and, working quickly, remove cookies with a spatula. Place folded message in the centre of cookie and fold in half, pressing edges together, then bend over the top of a glass or cup to create a crescent shape. This all must be done whilst the cookie is still warm, or they will crack.

Place in a muffin tray to cool - this helps to keep the shape.
