Preheat the oven to 350u00b0F. Line 2 baking sheets with parchment paper. Whisk egg white and sugar in medium bowl for 1 min until frothy. Add butter, flour and cinnamon, whisking until smooth. Let stand for 5 mins.

Drop 1 tsp batter onto baking pan. Spread very thinly with back of spoon to form 3-inch round. Repeat to form 1 more round, 1 inch apart. Spread 2 more rounds on second pan. Bake for 5-6 mins, or until edges are just golden.

Working quickly with a spatula, lift rounds from pan and place upside-down. Arrange message along the center of each cookie. Fold in half to enclose message and bend to form a horseshoe shape.

Place cookies, edges pointed down, into a mini muffin pan or an egg carton. Repeat with remaining mixture, cooking in batches of 2. Let stand to cool completely.
