2 tablespoons olive oil
2 tablespoons butter
1 onion, chopped
½ cup mushroom, sliced
1 cup arborio rice
1 ¼ cups chicken stock
1 cup leftover ham, and turkey combined
chopped parsley
salt & pepper
¼ cup parmesan cheese, grated

Place oil & butter in a microwave safe dish and cook on high for 2 minutes.

Add onion and mushrooms, Stir to coat with oil mixture.

Cook for a further 2 minutes.

Stir in rice and cook for 2 minutes Blend in stock and cook for a further 8 minutes.

Stir in ham, turkey, parsley & seasonings.
