Ingredients: 1 lb Ground chicken; 1/2 cup Onion, diced; 3 clove Garlic, minced; 8 oz Mushrooms, sliced; 6 oz Fresh spinach; 2 can Cream soups, I used one cream of chicken and one cream of mushroom; 1/2 cup Sour cream; 1/2 cup Milk or cream; 1 lb Tator tots; 1 as needed Salt & pepper

1 lb Ground chicken
1/2 cup Onion, diced
3 clove Garlic, minced
8 oz Mushrooms, sliced
6 oz Fresh spinach
2 can Cream soups, I used one cream of chicken and one cream of mushroom
1/2 cup Sour cream
1/2 cup Milk or cream
1 lb Tator tots
1 as needed Salt & pepper

Sautee the onion, and garlic in a bit of olive oil or butter.

Add the chicken, crumble and cook until no longer pink.

Add the mushrooms and spinach.

Cook and stir another 5 minutes or so.

Add salt and pepper.

Add soups, sour cream, and milk.

Stir until thoroughly combined and check for seasoning.

Pour into a large casserole dish.

Top with tator tots.

Bake at 400 for 30-45 minutes.

Finish under broiler setting for extra browning if desired.

Let cool for 10-15 minutes before serving.
