Dissolve yeast in water, stirring well.

Set aside.

Combine flour and salt in 4-quart mixing bowl.

Make well in center of flour; add yeast mixture and oil.

Stir and mix well until rough mass of dough forms.

If dough seems dry and stiff, add 1 to 2 tablespoons warm water.

Knead dough on work surface for 6 to 8 minutes, until smooth and soft.

Lightly flour large mixing bowl and dough.

Place dough in bowl.

Cover with plastic wrap and kitchen towel; let rise in warm place for about 1 1/2 hours. After, punch it down; knead it lightly.

Divide in half.

Roll each piece to 13 or 14-inch circles, about 1/8-inch thick.
