Extra Virgin Olive Oil Ring Cookies

   Preheat the oven to 180C.

   Combine the egg with the sugar in a bowl, add the oil, then the flour, and the lemon peel.

   Knead the ingredients together until the dough is smooth and compact, if the dough is too soft, add more flour.

   Shape the dough into small rings and place them on a wax paper-lined baking sheet.

   Brush the rings lightly with the beaten egg yolk and sprinkle with some granulated sugar, you can also sprinkle with some poppy seeds.

   Bake for approximately 12 to 15 minutes.

   Remove from the oven and cool.
