In a large bowl, stir together the Flour, Baking Powder & Baking Soda. Cut the Butter into cubes and add to the flour mixture. With two knives, cut in the butter until the mixture resembles coarse crumbs. Stir in Walnuts, White-Chocolate chips and dried Apricots.

Combine Vanilla and Buttermilk and add to the flour mixture, stir with a fork until combined. Drop dough by large tablespoonfuls onto a cookie sheet (9 to a sheet).

Preheat oven to 400 degrees. Bake 17 minutes until top is slightly browned. Try not to overbake or they will become dry. (I have made these quite a bit and 17 minutes is perfect provided you don't open the oven door during baking). Remove baking sheet and allow to cool for five minutes before removing scones. Serve warm with jam or lemon curd; or cool completely and store in an airtight container (you can re-warm in the microwave at 80% for 15 seconds and they taste just as good).Makes 27 scones.

Make as above, but instead of apricots & white chocolate chips, add:

1 Cup Cinnamon chips (optional; could put a teaspoon of cinnamon like I did)

1 Cup Dried Cranberries

Grated rind from one whole Orange
