Eggs Fantastic

   In a skillet, cook the sausage, mushrooms and onion until done.

   Drain and set aside.

   In a blender, combine 6 eggs and 3 Tbsp. sour cream for 1 minute.

   Pour into a greased 9 x 13 pan and bake at 400u00b0 for 10 minutes.

   Spread 1 c. salsa over the egg mixture. Add the meat mixture.

   Top meat mixture with Velveeta, cheddar, and mozzarella cheeses.

   Either refrigerate, freeze, or bake at 300u00b0 for 45 minutes.

   Let rest 5 minutes before serving.
