Chop a clove of garlic (or less if you like) and saute with a tablespoon or two of butter on top of the stove in an oval individual serving ovenproof dish. Don't brown the garlic, just take the edge off it. Then saute tomato slices in the same dish on top of the garlic until the tomatoes are a little bit soft (not real soft). Crack two eggs in the dish and cook in the oven at 400 degrees until the eggs set a little bit. Remove from the oven and add a bunch of shredded mozzarella cheese, salt and pepper and tabasco sauce (a few drops or not at your pleasure). Return to the oven on broil until the cheese melts. If you leave the eggs in too long the yolks will be hard.
