Start off by slicing your eggplant into 1/2 inch slices, and then sprinkle both sides with salt at least one hour before you are ready to begin preparing. This will get rid of the bitterness that many people associate with eggplant.

Now that you are ready to begin cooking, rinse the salt off the eggplant slices. Turn on your BBQ grill over medium heat and grill the slices until they have a nice char on them, just a few minutes on each side.

Go back inside, and preheat the oven to 375 degrees F. Place the eggplant slices on a greased baking sheet, and put about one tablespoon of marinara sauce on top of each slice.

Next sprinkle black pepper on each slice. Lastly, combine the three types of cheeses and sprinkle on top of each slice of eggplant.

Place in the preheated oven for 15 minutes, and take out of the oven when the cheese has just begun to brown.

Serve with a baguette, pasta, or steamed spinach or kale. Delicious!
