Cook sausage in medium-sized non-stick skillet. Remove from skillet and let drain on paper towels.

In medium-sized mixing bowl, beat eggs and mix in salsa, 1/2 cup cheese, garlic and pepper. Once sausage has cooled slightly add to mixture so as not to cook the eggs. (Don't worry about mixing evenly, it will even out in the pan.)

Over medium heat, pour egg mixture into same non-stick skillet and stir constantly with silicone spatula/serving spoon, being sure to keep eggs from sticking. This will give the eggs a light and fluffy texture.

Warm tortillas and divide eggs evenly into each. Top with remaining cheese and roll up.

I enjoy adding a couple of chopped scallions to add some variety. You can substitute any kind of breakfast meat you wish, or if you prefer a vegetarian option you can try coarsely chopped leeks. Also, substituting or adding parmesan, feta or goat cheeses can add a unique twist.
