For the tomato relish, heat oil in a medium saucepan on medium heat. Add onion and garlic and cook for 4 mins, stirring, until onion is tender. Stir in tomatoes, sugar and vinegar. Bring to a boil, stirring. Reduce heat to low and simmer for 30 mins, until thickened. Season to taste and transfer to a bowl to cool.

Cook bacon in a nonstick skillet on medium heat for 3-4 mins, until beginning to crisp. Remove from pan. Spray 6 egg rings with no stick cooking spray. Place in skillet and crack an egg into each. Cook for 2 mins, turn and cook for another minute, until whites are firm but yolks still runny.
