Easy Zucchini Sausage Bake

   Remove sausage from casing (I don't remove); cook with onion in 10-inch skillet until sausage loses redness.

   Remove and drain on paper towel.

   Saute zucchini in skillet drippings until transparent.

   Cover; cook 5 minutes or until almost done and reserve.

   Combine half of tomato sauce with rice and sausage mixture.

   Add salt and mix well.

   Put in 7 1/2 x 12 x 2-inch baking dish.

   Arrange slices of zucchini over top.

   Sprinkle with Mozzarella and Parmesan; spoon remaining tomato sauce over all. Bake, covered, at 350u00b0 for 20 minutes.
