1 to coat the pork Flour
1 to coat the pork Eggs
1 to coat the pork Fresh panko
5 tbsp Red miso
100 ml Sake
5 tbsp Sugar (demerara sugar is best)
1 Japanese leek
1 Cabbage
1 Japanese mustard
1 Ground sesame seeds

Combine the red miso, sake and sugar in a small sauce pan.

Heat the sauce over low heat to evaporate the alcohol.

Stir well until the sauce takes on a glossy sheen.

Coat the pork in the order of flour, egg and panko.
