1 pound Organic Chicken Breast, Cut Into Small Pieces
3 cloves Garlic, Minced
3 Tablespoons Olive Oil
1/2 cups Tomato Juice
1/2 cups Lime Juice, Plus Lime Wedges For Serving
1/2 cups Soy Sauce
1/2 cups Brown Sugar
1 teaspoon Pepper
1 whole Onion, Sliced
1 whole Red Pepper, Sliced
1 Tablespoon Olive Oil
8 whole Corn Or Flour Tortillas
3 whole Jalapenos, Sliced
Fresh Chopped Cilantro, For Topping

Place in dish and marinate 8 hours or overnight, turning once or twice.

Place chicken and marinade into a large skillet on medium heat until cooked through, about 58 minutes.

In a separate pan, saute onion and red pepper in a little olive oil until heated through.

Char tortillas on an open gas flame, about 30 seconds per side, moving the tortillas around with tongs until blackened on edges.

Assemble and top with jalapenos, cilantro and serve with lime wedges.
