Soak the peels in water overnight.

If you don't have time, it's fine to skip this step.

Using a knife, remove the inner pith of the fruit.

Be careful not to cut your fingers.

Put the peels in a pot and fill it with water (not listed).

Make sure the peels are submerged and place the pot on the stove.

Bring to a boil, lower the heat to simmer and cook for 15 minutes.

Change the water and repeat this step two to three more times.

Once you've boiled the peels until all the bitterness is gone, soak in clean water.

Pat dry and weigh the peels to determine how much sugar and water is needed.

Prepare the same amount of sugar and water as the peels.

Cut the peels into whatever size you prefer.

Add the ingredients marked to a pan and once the sugar has dissolved, add the peels and bring to a boil.

Simmer over low heat.

Turn off the heat when most of the water has evaporated.

Line the peels on parchment paper.

Let dry like this for a day.

If you prefer, generously sprinkle on a coating of granulated sugar and let dry.

The ones with the sugar coating won't be sticky and will be easier to handle, but you also can do without it like the ones on the bottom of the top picture.
