Combine butter, brown sugar and pudding mix in bowl; beat at medium speed until creamy.

Add egg; continue beating until well mixed.

Add flour, ginger, cinnamon and baking soda; beat at low speed, scraping bowl often, until well mixed.

Roll out dough, one-half at a time (keeping remaining dough refrigerated), on lightly floured surface to 1/4-inch thickness.

Cut with 3-inch gingerbread boy cookie cutter.

Place 1 inch apart onto large ungreased cookie sheets.

Add decorations for eyes, mouth and buttons as desired; press slightly into dough.

Bake 9-12 minutes or until edges are lightly browned.

Remove to cooling rack.
