1 - Preheat oven to 400 F /200 C

3 - Cut butter into small squares, (or grate it) and add to bowl. Mix until resembles coarse crumbs.

4 - Mix in the buttermilk and combine gently. A lighter option here is to use non or low-fat plain yogurt that has been mixed with a little milk. The yogurt lends a slight tart flavor!

5 - Turn out mixture onto a well floured surface and knead very gently for 2 minutes. Do not overwork the dough.

6 - Pat into a rectangle shape, cut into roughly 12 squares and plop onto a greased baking tray.

7 - Bake for 15 minutes, enjoy!
