Easy Beef Barley Soup – a delicious recipe with parsley, beef shin, water, carrots, tomatoes, celery. Easy to follow and perfect for any occasion.

1 large parsnips diced
1/4 cup parsley leaves chopped
3 pound beef shin
1 3/4 quart water
2 each carrots diced
16 ounces tomatoes peeled, crushed
2 each celery stalks diced
2 each onions chopped
2 each garlic cloves crushed
1 cup pearl barley

Place all ingredients, except barley, in a large pot.

Bring to a boil.

Lower to simmer and cook 2 1/2 hours.

Add barley and cook until tender, Check package of barley for approximate timing.

The meat can be served as a side dish to the soup with a dressing of mayonnaise and horseradish.
