Mix the flour, butter, sugar, vanilla extract, egg yolk, 4-5 tbsp cold water and a pinch of salt with the dough hook of a mixer, then knead by hand until smooth. Wrap in plastic wrap and chill for 1 hour.

Preheat the oven to 325u00b0F. Line 3 baking sheets with parchment. On a lightly floured surface, roll out the dough to 1/4 inches thick. Cut out 50 rabbits, 3 inches high, re-rolling the dough as necessary. Lay on the baking sheets and bake one sheet at a time for 15 mins each. Allow to cool.

Beat the egg white, powdered sugar and lemon juice with the whisk of a mixer. Spoon one-quarter of the icing into a piping bag fitted with a small nozzle. Color the remaining icing orange (by mixing red and yellow food coloring).

Brush 1 side of the rabbits with the orange icing. Allow to dry, then turn over and brush the other side. Allow to dry, then decorate with the white icing. Use the sugar pearls as tails.
