Ingredients: 15 ounces pumpkin can of; 3 cups sugar; 1 cup orange juice; 1 cup extra virgin olive oil; 4 eggs; 3 1/2 cups all purpose flower; 2 tablespoons baking soda; 2 tablespoons cinnamon; 1 teaspoon salt; 1 teaspoon baking powder; 2 teaspoons pumpkin pie spice; 1 teaspoon vanilla extract; 1 teaspoon brown sugar; 1 teaspoon cinnamon should be measured separate from the 2 tbsp above

15 ounces pumpkin can of
3 cups sugar
1 cup orange juice
1 cup extra virgin olive oil
4 eggs
3 1/2 cups all purpose flower
2 tablespoons baking soda
2 tablespoons cinnamon
1 teaspoon salt
1 teaspoon baking powder
2 teaspoons pumpkin pie spice
1 teaspoon vanilla extract
1 teaspoon brown sugar
1 teaspoon cinnamon should be measured separate from the 2 tbsp above

pre-heat oven to 350 degrees

mix the 1 tsp brown sugar and 1 tsp cinnamon. Set aside for later

mix dry ingredients in bowl EXCEPT brown sugar / cinnamon mixture.

add wet ingredients one at a time. Blend until smooth ( took about 5 to 7 min )

prepare two baking pans ( I use 8x4 bread pans ) with butter and flower or cooking spray

pour in mix into 8 x 4 bread pans

dust brown sugar / cinnamon mix on top of what is in pans

bake for 60 min or until toothpick can be inserted and come out clean

Let cool for 20 min before serving
