Use a muffin pan to help hold 4 parfait glasses at an angle. Mix 1/2 the cornstarch, 1 tbsp sugar and 1/4 cup milk until smooth. Place 3/4 cup milk in a saucepan and gently heat. Add the white chocolate and melt. Add the cornstarch mixture and simmer for 1-2 mins until thickened. Carefully divide the mixture between the 4 glasses. Chill for 30 mins at an angle.

Mix 1 tsp cocoa powder, the remaining sugar, cornstarch and 1/3 cup milk until smooth. Heat the remaining milk in a saucepan then add the dark chocolate and simmer for 1-2 mins, stirring. Add the kirsch. Set the glasses upright. Carefully pour in the dark chocolate on top of the white chocolate layer. Chill for 45 mins.

Whip the cream until very stiff. Transfer to a piping bag with a wide, star-shaped tip and pipe a peak into each glass. Top with a cherry and sprinkle with grated chocolate. Serve.
