Just before syrup reaches 260u00b0, beat egg whites until stiff but not dry. Pour 2/3 of the syrup slowly over whites, beating constantly. Return the other 1/3 syrup back to the medium heat for 2 to 3 more minutes.

Pour remaining syrup over whites and beat until whites hold shape.
