I use a Kitchen Aid Mixer with a Dough Hook to mix this bread.

Proof your yeast right in the Kitchen Aid mixer bowl.

Warm the bowl under hot water.

In the warm bowl add 1 Cup warm water (100'-110' F) mixed with 1 teaspoon of the superfine sugar, & sprinkle the yeast on top, stir and set aside.

You will know your yeast is proofed when it has bubbles and foam on top.

In another small bowl mix the remaining sugar, gluten flour, salt & baking soda, add this to the proofed yeast in the mixing bowl.

In a 2 cup glass measuring cup, microwave Smart Balance until completely melted and in the same cup add the buttermilk to the 2 Cup line.

Stir and add to the yeast mixture.

Now with the mixer on low, add the flour one cup at a time until a soft ball forms.

Knead on a floured surface for a few minutes until the dough is smooth and not sticky.

I use my countertop.

In a large clean bowl add the oil and cover the sides of the bowl with oil.

Place the smooth ball of dough into the bowl turning it to cover all sides of the dough with oil.

Cover with a clean towel and let it rise until double in size.

PUNCH it down!

Divide it into to equal pieces and shape into loaves.

Put the dough into two greased pans, I use Pam Spray.

Let the loaves rise just above the pans.

Bake in a 350' pre-heated oven for about 40 minutes.

When the loaves are lightly brown and sound hollow to the touch, there done.

Cool on a rack or enjoy hot.
