I just poured some sugar on an extra plate to gently roll cookie balls in before putting in oven.

Preheat oven to 375F

Combine brown sugar, butter and peanut butter in a bowl.

Beat until mixed.

Add the egg and vanilla.

Beat again until well mixed.

Add flour, baking powder, baking soda and salt.

Shape dough into one inch balls.

Roll the ball around in that extra sugar that you put on a separate plate.

Place on an ungreased cookie sheet 2inches apart or so.

Flatten the balls with a fork dipped in sugar and do a criss cross pattern.
