Ingredients: 4 medium potatoes, diced; 6 carrots, chopped; 3 celery ribs, chopped; 1 large onion, chopped; 2 garlic cloves, minced (or more to taste); 3 beef tomatoes, seeded and diced (canned ok); 1 ½ teaspoons oil; 4 cups chicken broth, unsalted; 4 cups cooked turkey, chopped; ¼ teaspoon oregano; ¼ teaspoon sweet basil; ¼ teaspoon thyme, crushed; salt and pepper (to taste); turkey stuffing (optional, *)

4 medium potatoes, diced
6 carrots, chopped
3 celery ribs, chopped

2 garlic cloves, minced (or more to taste)

Heat 11/2 tsp oil in a large saucpot.Saute onions til soft; add garlic, carrots and celery.

Stir-fry for 2-3 minutes.

Add potatoes, tomatoes and broth to the pot.

Bring up to a boil, then lower to a simmer for 15 minutes.

Add turkey and seasonings.

Cook another 10 minutes.

Salt and pepper as desired.

*I love to put a scoop of stuffing in the middle of bowl before adding stew.
