In a saucepan, heat all of the ingredients over medium, stirring frequently until thickened and smooth.

To make cookies: Take half the chilled dough, roll into a 1/4 inch thick rectangle on a floured surface. Spread half the date filling on dough in an even layer. Roll up dough (jelly roll style). Place the roll on a piece of plastic wrap, roll up and chill. Repeat with remaining dough and filling.

To bake, slice logs 1/2 inch thick. Bake the slices on a silicone mat or greased cookie sheet at 325 degrees F for 10 minutes.

Makes about 6 dozen cookies, though it will depend upon the size of your rolled logs. Store in airtight container. These freeze well.
