Cook raisins in water until they are very tender, set aside (do not drain).

Mix egg yolks and sugar thoroughly with electric blender until it is a very, very pale yellow color. Set aside.

Mix 1 cup of heavy sweet whipping cream 4 tablespoons vinegar.

Combine flour or cornstarch in 1/2 cup of cold water and stir to dissolve until there are no lumps

In top of double boiler, over boiling water, combine all ingredients stir constantly until thick and creamy. Bring to a roiling boil for at least four minutes, stirring constantly. Add vanilla and salt to taste. Turn into baked 9 inch pastry pie crust

Add meringue or thin layer of whipped cream. For meringue, beat egg whites with cream of tartar, until stiff. Gradually add sugar and the vanilla. Place over top of raisins. Bake in preheated oven at 425 until brown.
