Mince the garlic using a garlic press or dice with a knife.

Chop the green onions into small .5 cm thickness rings and dice the cilantro.

Dice the shallots

Heat up a pan and add some oil stir fry 3/4 of the minced garlic and green onions and shallots until fragrant

Add the pork and break the pork to make sure the minced pork is not in a big lump

Add the soy sauce, a dash of salt, sugar and white pepper and 1/2 tablespoon of spicy black bean paste.

Mix until well incorporated.

Add a splash of sake/chinese cooking wine.

To prepare the soup base put the peanut butter at the base of the bowl and mix in the leftover garlic with a tiny bit of water until smooth/ well incorporated

Boil the noodles according to package instructions / own texture preferences.

Add the hot noodle water into thr bowl and mix till the soup no longer has lumps add the noodles and put the stir fried pork on top and garnish with some cilantro
