Curried Cream Of Leek Soup

   Saute the onion in a mixture of butter and oil.

   Once softened, add the leeks and potatoes. Saute for 5 minutes.

   Cover everything with water, salt to taste, and simmer on low heat for 40 minutes.

   Blend together with the curry and cream. Add the curry little by little until reaching the flavor you like.
