Curried Cauliflower Apple Soup

   Cook cauliflower as directed on package in a large microwaveable bowl.

   In a smaller bowl, heat olive oil, curry powder, onion and garlic on high until softened, about 3 minutes. Watch that it doesn't burn

   Add apple sauce, 3 cups of broth and onion mixture to cauliflower.

   Microwave on high about 6 minutes, stirring halfway.

   Let cool and puree with immersion blender or processor.

   Adjust seasoning and add more broth if necessary.

   Swirl with yogurt and/or half and half.

   Sprinkle with chopped chives if desired.

   Can be served hot or cold.
