Cucumber Canapes

   cut cucumber in half, lengthwise, set one half aside.

   peel other half, seed and grate flesh into bowl.

3. 3

   add cheese, paprika, horseradish and mayo to grated cucumber, season with salt and pepper.

   seed remaining cucumber and slice thinly with peeling.

5. 5

   spread cucumber/cheese mixture over toasted rounds of bread and top with slices of cucumber.

   serve.
