Crunchy Shortbread Cookies With Caramelized Pine Nuts

   Preheat oven to 350 degrees Fahrenheit.

   In a saucepan, heat the sugar until it's a very light caramel.

   Add the pine nuts and stir. Add the 2 grams of butter, and mix. Pour onto a piece of parchment paper, or a Silpat to cool.

   In a bowl, whisk the egg yolks, 100 grams of butter, and sugar.

   Add the sifted flour and baking powder, mix until the dough comes together.

   Form a dough ball, cover with plastic wrap, and refrigerate for 30 minutes

   Roll out the dough, and cut out the biscuits with a cookie cutter.

   Sprinkle with the caramelized pine nuts.

   Bake for 20 minutes.
