Crispy Cinnamon Sweet Potato Fries

   Preheat oven to 400 F. Line two rimmed baking trays with a silicone baking pat, parchment paper, or cooking spray.

   Slice each potato into thin, uniform strips and place them into a large bowl.

   Combine olive oil, cornstarch, cinnamon, nutmeg and salt into the bowl with the sweet potatoes. Toss to coat well (I used my hands to make sure every potato strip was coated, but feel free to use a spoon).

   Spread potatoes in a single layer on baking trays, but be careful not to place them too close together (otherwise they will just steam instead of turning crispy).

   Bake for 30 minutes, or until golden brown (flipping them over halfway through).

   Remove from the oven, let them cool for 5 minutes, and serve with ketchup or your favorite dipping sauce.

   - Serving size is based on number of sweet potatoes, so if you would like 3 servings (instead of 2) use 3 sweet potatoes, etc.

   - These sweet potato fries are easily adjustable to suite your tastes! Feel free to add different spices, such as red pepper flakes, garlic powder, Italian seasoning, etc.
