1. Heat oil to 375 degrees in a deep fryer or in a skillet over medium-high heat. (If the fries are not super crisp, turn the heat up just a little.)
2
2. Slice washed and unpeeled potatoes into strips.
3
3. Coat potatoes with milk.
4
4. Add cayenne to the flour and then drop your potatoes into the cayenne-seasoned flour.
5
5. Drop battered potatoes in oil and cook until light brown on both sides.
6
6. Sprinkle with salt or more cayenne (if you're brave enough).
7
FYI: You can use any flour, but the wheat flour truly does nothing different for the taste or texture, so don't be afraid to use it. Plus, it adds a nice golden color.

MAPLE MUSTARD SAUCE:
9
The basic mustard sauce recipe is 2 parts of yellow and whole grain mustard (1 part each), 1 part plain yogurt or mayonnaise, and maple syrup to taste. Simply mix ingredients together until smooth. Adjust the amounts to your liking.
