1. In a heavy-bottomed sauce pan, begin heating the oil to 365u00b0F. I'd recommend using about 4-5 inches of oil so the actual amount will vary depending on the size of the pan you use.

2. Peel and core the apples. Cut them into strips the approximate shape of French fries - I'd recommend keeping them at least the thickness of your pinky because if you make them much thinner they just taste starchy after you fry them . . . and you want to make sure the apple taste comes through!

3. In a medium mixing bowl, add the corn starch. Toss the apple slices in the starch making sure to cover every piece thoroughly. Place the apples in a mesh strainer and toss/shake them (either over the same bowl or over the sink) to get rid of the excess starch until only a thin coating is left.

4. When the oil has reached the correct temperature, add about half of the apple slices to the pot and allow them to cook for 3 to 3.5 minutes, until the edges become a golden brown. Remove the slices to a bowl lined with paper towels and allow them to sit for about 30 seconds. Mix the cinnamon and sugar together in a bowl and toss the fried apple with some of the mixture. Remove these finished slices to a serving platter and replace the paper towels in the bowl. Repeat the process with the remaining apple, first making sure the oil is still at the temperature that you want.

5. Enjoy the fries while still warm, dipping them in a homemade or store bought caramel sauce!

*Note: You don't want to make these too much ahead of time because they will get a bit soggy as they cool and they're much better when crispy.
