Mozzarella cheese, sliced thin or grated; paprika

1 pkg. hot or sweet sausage
2 Tbsp. butter or margarine
2 or 3 large red and green peppers, sliced
1 medium onion, chopped
2 medium zucchini, sliced and unpeeled
1 average eggplant, cut up and unpeeled
2 cans stewed tomatoes
1 pkg. fresh mushrooms, sliced and sauteed in butter

Cut sausage into 1/2-inch slices.

Brown in large skillet or electric frypan with butter.

Add sliced peppers, onion, zucchini and eggplant.

Stir in stewed tomatoes.

Cover and cook down 1/2 hour or so.

Put in baking dish (13 x 9 x 2-inch).

Cover with sauteed mushrooms.

Place Mozzarella cheese on mushrooms.

Sprinkle with paprika, if desired.

(Mushrooms may be omitted, if desired). Bake at 350u00b0 until cheese is bubbly and browning, approximately 20 to 25 minutes.
