In a skillet heat coconut oil at medium high heat until it melts.

Add Potatoes O'Brien and stir to coat with oil as it heats in the skillet. Remember to periodically stir as it cooks.

Put cream cheese in a microwaveable mixing bowl and microwave for 30 seconds to soften. Set aside.
