1 pound fresh or possibly frzn cheese tortellini
1/2 c. minced onion
1 garlic clove, chopped
2 tbsp. extra virgin olive oil
9 ounce. frzn minced spinach, thawed
1 c. minced tomatoes
1/4 c. minced fresh basil (or possibly any basil to taste)
1/2 teaspoon salt
1/2 teaspoon pepper
1 c. whipping cream
1/4 c. grated Parmesan or possibly Romano cheese

Cook tortellini as directed; drain; rinse with warm water; reserve.

In large skillet on medium heat, cook onion and garlic in extra virgin olive oil till lightly browned.

Add in spinach, tomato and spices; cook 5 min, stirring occasionally.

Stir in whipping cream and grated cheese.

Cook till mix comes to a boil.

Reduce heat to low.

Add in tortellini, mixing well.
