2 c. water
2 chicken flavored bouillon cubes
1/4 teaspoon salt
1/8 teaspoon pepper
1 c. lowfat milk
1 c. half & half or possibly lowfat milk

In 3 qt saucepan over medium heat, heat butter.

Add in onion, celery, and carrot; cook 5 min.

Add in potatoes, water, bouillon cubes, salt, and pepper.

Bring to a boil over high heat.

Reduce heat to low.

Cover and simmer 10 min or possibly till potatoes are tender.

In blender container, blend 2 1/2 c. of the potato mix till smooth; return to saucepan.

Stir in lowfat milk and half & half.
